论文编号:SW012 论文字数:11939,页数:26 摘 要:由于世界蛋白质的缺乏,使得人们面临着一个严峻的问题。而鱼类资源的量很大,可以很好的被利用,来补充其他蛋白质的不足。而且鱼类蛋白质的品位极高,所含有的氨基酸比例与人体肌肉的成分极为接近,吸收利用率高,因而开发鱼蛋白水解物和分离物引起了人们的广泛兴趣。本实验则是探索了采用以海藻酸钠为载体(包埋法),研究了酶浓度,海藻酸钠浓度,水解时间,水解温度等4个因素对固定化酶水解后得到氨基酸氮的含量的不同,并确立了固定化酶水解带鱼蛋白的最佳工艺条件:酶浓度为1.5%,海藻酸钠浓度为5.0%,水解时间为5h,水解温度为50oC。 关键词:带鱼蛋白;固定化酶;水解 Preliminary Study on Hydrolysis hairtail Protein by Immobilized Enzyme Abstract:Because world protein lacking, causes the people to face a austere problem. The amounts of Fish resource are very big , which can be made good use of, come to supplement other the protein deficiency. The fish protein has adequate nutrition which is like muscle component of human body. As a result, people are interested in developing the fish protein. This article studied Alginate as Vector (embedding) the concentration of enzyme, the concentration of Alginate ,the time of Hydrolysis and the temperature to influence the result of Hydrolysis. The Optimum conditions of Hydrolysis hairtail Protein is as Following: the concentration of enzyme is1.5%,the concentration of Alginate is 5.0%,the time of Hydrolysis is 5h,temperature is 50 oC。 Keywords:hairtail protein;immobilized enzyme;hydrolysis 目 录
