鹿角粉酶降解的研究

摘要
 本实验采用Alcalase碱性蛋白酶水解鹿角粉，通过对蛋白质提取率的测定来探索其适宜工艺条件。鹿茸中含有多种生物活性物质，能够促进机体的生长发育和新陈代谢，增强了机体的免疫功能。传统的鹿茸加工方法多为热加工，破坏了鹿茸含有的活性肽、酶类以及细胞因子，因此近年来，寻求降解鹿角粉的最优方法以及适宜工艺条件，引起了化学界的广泛关注。
 研究工作主要集中在寻找Alcalase降解鹿角粉的适宜工艺条件，包括温度、pH值、酶用量、底物浓度、提取时间。通过对蛋白质提取率的测定来研究鹿角粉的酶降解，探索Alcalase蛋白酶降解鹿角粉的适宜工艺条件。
    工艺条件：65℃、pH 8、酶用量0.08mL(E/S 8%)、底物浓度3%-4%、提取时间5h

Title   The research of antlers powder's enzyme degradation
Abstract
 This study used Alcalase-alkaline hydrolysis Antlers powder，through the protein extraction rate to explore its appropriate technology conditions. Velvet contains a variety of bioactive substances that can promote the body's metabolism and growth and development, enhance the body's immune function. The traditional velvet processing methods for general is thermal processing, destroyed the velvet contains the active polypeptide, enzymes and cytokines. So in recent years, looking for antlers powder degradation of the best practices and appropriate technical conditions, has aroused widespread concern in the chemical sector.
 Research focused on staghorn powder Alcalase degradation of suitable conditions, including temperature, pH, the amount of enzyme, at the end of the concentration and extraction time. Through the measurement of protein extraction rate of the change to study the antlers of degradation, and to explore the degradation of antlers powder appropriate conditions through Alcalase degradation.
 Appropriate conditions:65℃、 pH 8 、the amount of enzyme 0.08mL(E/S 8%)、
